Asparagus, Honey #Vegan

I know some vegans won’t eat honey because it’s an animal product, but I do. It’s a continuum, right? A sliding scale from NO ANIMAL PRODUCTS to ALL ANIMAL PRODUCTS. We’re all just trying to get through this vale of tears, so let’s not argue about where we sit on the sliding scale, right?

Okay, back when Charlie and I kept bees, I subscribed to the National Honey Board‘s newsletter. Our bees lived lives of unending horror and then all died, so we didn’t get more. Everything bad that could happen to a hive happened to ours, except being raided by bears and skunks. The lives of our bees made Die Hard look like a Christmas party. Wait what? It was a Christmas party? Never mind.

ANYWAY, the newsletter gave me this recipe and I tried it and it was so good that #4 Daughter, the amazing Sara Marian, ate even the stalks, which she usually goes YUCK at.

I did the recipe pretty much exactly, so please go to their website and give them some eyeball time. I’ll wait. Here’s my plate:

The other thing on the plate is quinoa topped with a sauce of my own devising which is nothing other people haven’t done.

Cut up mushrooms, leeks, and spring onions and saute them in vegan margarine. Then stir in some flour and stir to coat the veg. Add red wine and cook until the sauce is a bit thickened and glossy.

And some people think vegan food is boring and gross. SMH

YES, I’M AN OMNIVORE, but my tastes are working their way back to the vegan end of the scale.
