Peanut Soup. YES, PEANUT! #Vegan

This looks so creamy and feels so rich in the mouth and is so filling, it ought to be called I Can’t Believe It’s Vegan Soup. But it isn’t.

Feasting at Home, where I got this recipe, says:

African Peanut Soup, also known as Groundnut Stew,  is a cultural staple to West Africans.  There are many variations of this peanut soup, with the recipe ingredients varying by region.  Peanut butter (groundnuts), tomatoes, and chilies are generally the base components, the flavors are tweaked from there.

I first had this at a NETWORK (New Energy To Work Out Racial Kinks) meeting, and I just HAVE to have some, once in a while. LOVE IT! It’s hard to convince other people to try it, though. They’re all, “Ewwwww! Peanut butter soup???” Their loss, because it ROCKS!

I pretty much followed Tonia’s recipe (see above). I didn’t have fresh chilies, so I used RoTel diced tomatoes with green chilies in. I used crunchy peanut butter. I cooked it in my Instant Pot. It was freakin’ DELICIOUS! Sara was wary of it, but she tried it and ALSO LOVED IT. You can see the sweet potato (oh, yeah, I used sweet potato because you can’t find real yams around here), tomato, chickpeas, and spinach.

I guess I need to cover my ass and say DO NOT COME ANYWHERE NEAR THIS SOUP IF YOU HAVE A PEANUT ALLERGY.

      Do you have a peanut allergy, or just don’t want to take a chance? If you’re not allergic, and you see it on a menu somewhere, ask if they’ll let you have just a taste. You might not like it, but you might be surprised and think it’s great.

          Use creamy peanut butter instead of crunchy and maybe half a cup rather than a whole cup. *wheedling tone* You could put meat in it. /*wheedling tone*

    Hmm…I love peanuts but hate peanut butter so can’t see myself making it. That said, I don’t like chickpeas either but I love humus so…maybe one day?

      Leave out the peanut butter, and just put crushed peanuts in. Maybe a touch of coconut cream to give it silkiness?
