A Whatever #Vegan

One of Sara and my favorite dishes is Whatever. It’s equally good with or without meat/dairy/eggs. This Whatever was vegan.

Whatever, as you probably gather, is just made up of whatever’s in the fridge/freezer/pantry and sounds like it would be good together. Whatever can be soup, salad, or mess (of stuff). This one was a mess of stuff.

Shallots, orange bell pepper, yellow squash, mushrooms. The batteries were not added for extra zing.

A can of great northern beans, rinsed and drained, also sounded good, so in they went. So did carrots and sliced olives and a bitty bit of vegetable broth cooked down.

Perfect for sopping up the liquid with Mrs. Wiest’s olive bread. Don’t search for it on line — she sells at our Saturday farmer’s market.

    Sans olives (which I cannot eat), this looks very good. I like simple meals like this.
