You know I love tofu. I also love noodles, and I also love stir-fry. So this dish was a grand slam.
Red onions, red peppers, green peppers, garlic, mushrooms, rice noodles, and some kinda sauce (probably bottled General Tso’s Stir-Fry Sauce). I squished the water out of the tofu, cut it into rectangles, marinated it in liquid aminos and sesame oil, dredged it in breadcrumbs and cornstarch, and fried it.
I suppose you could substitute chicken or duck or rabbit, or beef, or pork, or squirrel, or fish, or …. But I did tofu.
