Lace Omelet #Vegan #WeirdFood

After spending my vacation eating omnivorisly, I was jonesing for vegan. This particular dish was not an unequivocal success, although it actually tasted pretty darn good.

I scored some tender fall kale at the farmers market, so I tore it into bits and dry-fried it with mushrooms and onion.

So far, so good.

Then I mixed Just Egg (made with mung beans) and plant-based “milk”.

Looks okay.

I added salt, pepper, and Fines Herbes and poured it over the kale stuff. When I’m cooking an omelet made with chicken eggs and cow’s milk, I sometimes cover the pan to make it cook faster and to make it puff up. That didn’t happen. It didn’t steam, it boiled. Boiled.

There was nothing to be done except boil all the liquid out of the pan, throw some non-dairy “cheese” on it, and roll it up.

Not what I was expecting, and not what I was going for, but not bad — Not bad. Fresh tomatoes on the side, and BOOM!
