I am SO looking forward to getting my new glasses! I can’t tell if my pictures are out of focus or not, but I’m pretty sure these are out. The food was good, anyway.
I had one large portobello mushroom and one medium one, so I cut the smaller one up and cooked it in vegan margarine with onions, salt, pepper, and some kind of spice blend — probably Penzeys Bavarian, since that seems to be my favorite these days.
At the same time, I pulled the stem out of the bigger mushroom, seasoned it, and cooked it upside down until the chopped mushrooms were as done as I wanted them.
I mixed some bread crumbs with the chopped mushrooms and margarine, flipped the mushroom cap, and stuffed it with the chopped stuff.
Man, was that good!
I wanted to bake bread for the one party we made it to, but my yeast, alas, had gone to Jesus. So I made Buckskin Bread, which is on my Alligator Sandwiches recipe page.
The recipe: 2 cups self-rising flour and 1 cup of water. Mix and bake at 400C (about 204C) for 20-30 minutes.
When you first taste it, you aren’t impressed. But it’s wonderful for sopping up juices, and then you realize it’s great warmed and buttered, and then you’re addicted. I altered this recipe from one in The Art of American Indian Cooking: The one in the cookbook called for plain flour, salt, and baking powder, but I switched it to self-rising flour, which already has those ingredients in it. Probably not quite the same, but easier, yeah?
