Food: Vegan Feast With Tofu (Yum!)

I do love me some tofu. Many people don’t like it because it can be squidgy. Many people like it squidgy. It wasn’t squidgy this way.

So I cut a carrot into pieces about the same size and I took a slice of super-firm tofu and squished even more of the water out of it between paper towels and two cutting boards with an iron skillet on top. Then I coated carrots and tofu with salt, pepper, and a little oil. I have an electric steamer, which I used to steam carrots and tofu for about 30 minutes.

Meanwhile, I sauteed mushrooms and radishes in olive oil with salt, pepper, and mustard seeds.

SO GOOD! Srsly, if you haven’t tried sauteed radishes, try some.

    I’m not a fan of tofu, but that does look good. I would certainly give it a try.
