Cooking Again

I was SO GLAD when I could get back to cooking! Sara cooked for me when I couldn’t, but cooking is a pleasure for me, I was glad to get back to it.

Here’s what I made last night and this morning, inspired by a recipe in the Bad Manners newsletter. WARNING: They use more bad language than I do. I have all their cookbooks except the one that isn’t out yet, and I have that one on preorder.

Coconut oil. Eggplant. Red onion. Garlic. Green beans. Tomatoes. Smoked salt. Penzeys Amazigh Seasoning Blend. Penzeys Tuscan Sunset. Ramen noodles.

I heated the coconut oil first, then cooked the red onion and chopped garlic until they were tender. Added the seasoning blend, eggplant, and green beans, and Tuscan Sunset, and cooked those until the eggplant was tender and the green beans were still crunchy. Then I chopped up a tomato and put that and its juices in.

Meanwhile, I cooked the ramen, then put the noodles and some of the broth into the pan, tasted and added salt, and cooked it until the liquid was gone.

As always, you can use whatever ingredients you like, add them in whatever order makes sense to you, cook them as long as you like and to whatever liquification you prefer.

I had some left over, so I heated it and added a scrambled egg, and that was breakfast.

    When I commented yesterday, I almost added, “And I hope you’ll be sharing meals again,” but I didn’t want you to feel bad if you weren’t able to cook yet. This looks really good, and I like everything you have in it.I also like the idea of having it for breakfast with a scrambled egg.

      Penzy’s Amazhig seasoning is mostly cayenne pepper, so this was pretty hot, but the heat came and then went, so it isn’t a heat that makes your mouth feel blistered all day.

    Apart from the vegies, most of the other ingredients are now on my no-no list as I’m sticking with my super-low-sodium diet until I feel healthy again. I did drool a little over the pics though. πŸ™‚

      The noodles themselves could be any noodles. I didn’t put any of the seasoning packet for the ramen in it. The Amazhig doesn’t have any salt in it, but I’ll tell you what: Mrs. Dash’s salt-free blends are EXCELLENT and super flavorful. Some of them are peppery-er than others, but they have a wide variety of blends. Our grocery stores carry Mrs. Dash; if yours don’t, Mr. Internet is your friend.

      I got it from a woman at the farmer’s market. She says it’s smoked Himalayan pink salt.
