I love parsnips. Don’t judge. They’re like good, fresh carrots, with a touch of sweetness. I like them best roasted. On this plate, they were rubbed with olive oil and sprinkled with salt and pepper and roasted in the air fryer at 325F (~163C) until they were done (these took about 15 minutes).
The mushrooms, I cooked in a dry pan with a little salt until the flavor was concentrated. Then I added pepper and smoked paprika and slapped ’em on a plate. That blob on top is vegan sour cream and tons of dill weed.
