How to make ugly pie.

So, pie crust: I took about 1/3 cup of regular flour, a sprinkle of salt, and a sprinkle of sugar. Then I got a knob of butter (vegan butter) and worked that in. How big a knob? Just…you know…a knob. When that all looks kinda sandy, I added ice water until it made a dough. Rolled that baby out.

Do YOU know how chefs roll out circles or rectangles? ‘Cause I don’t. No matter what shape I’m going for, it always looks like it’s auditioning for THE BLOB.

ANYWAY, filling: onions, garlic, tri-color peppers, celery, red-fleshed potato, white-fleshed potato, parsnip. Boil that in salted water until it’s all soft and there’s only enough water to cover it. Then squirt in some vegetable broth concentrate or vegan chicken or beef bouillon, or just add salt, pepper, and whatever herbs and spices you like. Taste it and adjust the seasoning to suit yourself. Mix some flour and cold water and stir that in, stirring and cooking until there’s a gravy. KEEP STIRRING until the gravy is glossy.

Oh — I also broke up a Beyond Sausage plant-based “sausage” into it.

Let it cool down while you chill the dough.

Wrap that filling in the pie dough and bake it at 400F for about 20 minutes.

I told you it was ugly.
Sure was good, though.

I wouldn’t make it for company.

      Now that I have sharp knives, I totally don’t mind chopping veg. And it was only a bit of each.

      Really, I don’t know. When that happens to me on other people’s blogs, I log out of WP below the comment form and back in.
