We had a nice day that turned hot when I wasn’t looking, and I wanted something cold for supper.
Although I’m Mostly Vegan, I did have some leftover chicken. I also had a green onion dying from the tail up and the tag end of a baby bok choi, some fresh celery for a wonder, and some dried shiitake mushrooms which I rehydrated in warm water. Cooked some rice noodles and rinsed them in cold water.
I dressed this with Ume Plum Vinegar, sherry cooking wine, sesame oil, and a pinch of ancho chili powder.
It hit the spot!
