Food Tuesday: Pot Stickers

I never met a dumpling I didn’t like, except for one batch I made that — well, never mind. Not a happy memory.

ANYWAY, when I found out that dumpling wrappers have the following ingredients:

  1. flour
  2. water

I decided to make some. So I did. The recipes I found had proportions of ingredients, but they all served six or more, and if the site had a thing where you could reduce the number of servings, the ingredients measurements came out to like 4.3 tabelspoons or some shit, and I can’t. I just can’t.

So I ran some water into a bowl and bunged in some flour and called it done. To be honest, I think I should have put in more flour, because the dough was soft and I think it was supposed to be stiff. Mix, knead, cover, and let rest. I was watching Peaky Blinders, so I lost track of time, but I think it was about 1/2 hour. I don’t think it needed to be that long, but it was. Then you roll the dough out into a rope, cut the rope into equal pieces, and roll the pieces into circles. I don’t have one of those tiny dumpling rollers, so I used an empty glass pepper jar (cylindrical). It worked.

I filled the dumpling wrappers with chopped cooked chicken and green onion. I’d rather have used veg, but I’d already put the veg away from stuffing the sushi roll, and I was too lazy to get it out again and chop it. So I filled them and pleated them, put them bottom side down in sesame oil in a hot pan until they browned on the bottom, added a bit of water, covered them, and reduced the heat for about 20 minutes. Took off the lid and increased the heat until the water was gone and a bit longer, and:

BOOM!

It sounds complicated, but it’s super easy. The dipping sauce is teriaki sauce cut with soy sauce. And, srsly, if you love sushi roll, make yourself some. Also super easy.
