Food Tuesday: Bread Salad

I’ve probably posted one of these before, but they’re so quick and easy, and they taste so good, so here’s another go.

This one is farmers market tomatoes and cucumbers and croutons made of roasted farmers market sourdough bread and mozzarella balls cut in half. I usually dress it by just squirting on some Italian dressing, but I only had a little, so I used that and then added red wine vinegar, olive oil, Penzys Tuscan Sunset herb blend, and salt until it tasted good. The idea is that the outside of the bread soaks up the liquid from the dressing and veg and gets all rich with the flavor and still crunchy in the middle. Sadly, traffic was terrible, and Sara was later than expected, and the bread went to moosh, but it was STILL GOOD, even so.

Delicious salad, especially with fresh veg. You can put whatever you like in: summer squash, red onions, green onions, whatever.
