#4 Daughter and her AlmostMister came to visit this weekend, and AlmostMister made chicken with apricot glaze, based on two Hello Fresh recipe cards. He marinated the chicken with, among other things, Penzeys Turkish Seasoning. As #4 Daughter has taught us, he massaged the marinade into the chicken, cooked the chicken just shy of enough, and took it out to finish cooking and to relax, leaving it tender and juicy.
But that’s not what I’m posting about.
I’m posting about the apricot glaze that goes with the chicken.
While the chicken is out resting, one adds a bit of olive oil and some scallion (green onion) whites, then apricot jam, water, stock concentrate, and a bit of lemon juice. After a couple of minutes, add some butter (or margarine), salt and pepper, and Bob’s your uncle. I would give you amounts, but they cook like I do, by guess and by gosh or, to put it another way, by taste.

This was SO DELICIOUS! I’m wondering how it would taste with fried or baked tofu….
This was honestly the best chicken dish I’ve ever tasted, including the Coq au Vin I had at a fancy and highly regarded French restaurant.
