I meant for this to be puff pastry, but it turned out to be shortcrust. Still good, still crispy, but not the same. It’s hard to get puff using vegan margarine. Hard for me, anyway.
At any rate, this was yummy and quite satisfying. It made enough for me to have for two meals.

It’s leftover chicken, mushrooms, onions, dried tomatoes, and baby bok choi, cooked and cooled, then put into the crust and baked at 450F (232C) for about 20 minutes.
Very comforting.
