Look what I scored at the grocery!

YES! If you don’t know about Meyer lemons, here’s some of what The Spruce Eats says about them:

Meyer lemons are believed to be a cross between a regular lemon and a mandarin orange. The fruit is about the size of a lemon, sometimes slightly smaller, with a smooth, deep yellow peel. When mature, the thin peel can be almost orange. The flesh and juice are sweeter than a regular lemon and can be used raw or cooked. Because the peel is thin and lacking in a thick, bitter pith, the whole lemon (minus the seeds) can be used.

The Spruce eats

I got ONE many long years ago at a Mediterranean grocery store that is no longer there, and made the best lemon pie EVER with it. I gave some of these away, and stuffed the slices of one under the skin of a chicken I roasted, but I don’t know what I’m going to do with these last two. Another pie?
