This didn’t go the way I had planned, but it ended well, so who cares?
I often get a rotisserie-cooked chicken from the store because they put them on sale if they didn’t brown up enough to look appetizing, and I am not one to pass up a good sale or to be put off by something I can easily fix.
So I had some chicken breast, already cooked and seasoned.
I also bought a jar of non-dairy Alfredo sauce, because the non-dairy Alfredo sauce ROCKS, but I got it out and the top had popped and it was spoiled. **weeps**
But I know a trick worth two of that. I know how to make white gravy bechamel sauce, and I know how to add cheese to it make mornay sauce.
While I brought salted water to a boil and cooked some noodles, I sauteed some onion, mushrooms, and broccoli. I added a couple of tablespoons of vegan margarine, then a scant couple of tablespoons of flour. I usually use NotMilk vegan milk substitute, but I had run out and and bought a pack of shelf-stable actual milk, so I added a couple of cups of that and cooked it down a little. Then I added grated cheese, the cooked noodles, and the chopped chicken. I topped it with shredded Parmesan.
For vegetarian, I would omit the chicken. For vegan, I would (obvs) use non-dairy milk and cheese.
