Food Tuesday: Chicken Pot Stew

I had a bunch of rotisserie chicken I had pulled off the bone, so I made this:

I put carrots, celery, potatoes, frozen flat dumplings, and a carton of chicken broth into my Instant Pot, seasoned it with salt, pepper, onion powder, and sage, and pressure cooked it all for about half an hour. Then I added the chicken and some frozen corn left from last year’s farmers market. I wanted to add peas, but I was all out. Alas.

I would tag this as quick and easy, but it’s only quick and easy if you have a good knife to cut up the vegetables. I do, but before I had good knives, this would have taken time, many swear words, and possibly blood, so YMMV.

It was delicious!

    It does look delicious. It reminds me of a chicken pot pie without the pie.
