Food Tuesday: Stuffed Pepper — But It’s Not What You THINK It Is

You know how you stuff a green pepper with ground beef and rice? Well, I had a red pepper and leftover mashed potatoes and corn and some farmers market sausage. The veg were all from the market, too. I also used some green onions from my container garden.

I roasted the pepper until it was a little soft, cooked the sausage and onion, heated the leftover taters/corn with it, mixed in some cheese, stuffed the pepper, and roasted it until the cheese was all melty.

I liked it real well. Might do that again, sometime.

    You and me, both, M.A.,hard to beat mashed potatoes and corn mixed, except maybe with a drizzle of gravy. You dish looks good to me.

      It was SO good! Mashed potatoes mixed with corn is probably my favorite dish. Which is funny coming from somebody who, as a child, couldn’t stand for my foods to even touch.
