My usual breakfast is an open-face egg sandwich. Some times I make it one way, some times another, but I tried it this way yesterday and kinda liked it.

I heated a skillet and broke an egg into it. Also broke the yolk because, although I love what #4 Daughter calls “egg blood”, it makes a messy open-face sandwich to be sure. Next to the egg I put a slice of cheese with hot peppers in it.

I let that cook until the egg was done and the cheese was toasty on the edges, then folded the cheese over the egg and slid it onto the bread.

I ended up flipping it over to put the cheese UNDER the egg, because the cheese kept pulling off of the egg, and that won’t do.

It was most satisfying.
