So one of my new cookpans is for frying chicken (high, straight sides), but it’s also a kind of half-Dutch oven. So I made this.

I cut the excess fat off the chicken and rendered it out, then rubbed the chicken with salt, pepper, and ground sage and browned it on both sides in the rendered chicken fat. I sliced an onion and an orange and put that on top of the chicken, covered it, turned down the heat, and cooked it low and slow for about four hours. Like a crock pot, essentially. Then I lifted the chicken out to rest and made a gravy with the juices. We had it over rice.
Its possible I’ll never use my crock pot again, unless I have to leave something cooking while I go somewhere.
My Instant Pot, now, that’s a ride or die.
