Coconut “Creamed” Kale

  • olive oil
  • onion, diced
  • garlic, minced
  • kale
  • water, salted
  • coconut milk
  • cardamom
  • cornstarch

Heat olive oil in pot. Saute onion and garlic until onion is tender. Add water and salt and bring it to a boil. Add kale. Cook until as tender as you like it. Drain off water. Mix cornstarch and cardamom with coconut milk. Add to kale and cook, stirring, until sauce is thickened.

People loved this at Thanksgiving, although we decided, at our house, we like regular kale (without the coconut sauce) better.

    I have to confess: To me, making food fancy is adding chocolate and maybe some whipped cream.

      Heee! But not even I would eat chocolate-covered kale. 😉 Ooo, wasn’t that chocolate the Irish Rover guy gave us DIVINE?
