Food Tuesday: Mexican Pesto

I had some gnocci and I had some avocado, so this happened.

Into a food processor, I put an avocado, some lime juice, salt, cilantro, slivered almonds, salt, and smoked paprika. I cooked some gnocci according to package directions and added the two together in a greased casserole dish. I put real cheese on top and baked it until the cheese melted, but I could have used vegan cheese.

The leftovers were a little gummy, but I added a touch of oil and a splash of water, and it was perfect again.

    I swear, you will be the last person alive on earth after the apocalypse. It seems you can take any leftover and turn it into a meal.
