Food Day here at the blog, and I’m singing the farewell song of the couscous. Alas, Charlie has decided he doesn’t much care for it. Since I like it but can live without it, that means I probably won’t have any more for a while. Eventually, I’ll forget he doesn’t much care for it and I’ll buy more.
Here’s what we had with what I bought last time. This is pearl couscous, larger than ordinary.

I heated some olive oil in a pan, toasted some chili powder and cumin, stirred in some black beans, and poured that over hot couscous. I melted some cheese over that, and topped it with crushed tortilla chips.
Then there was this:



That’s couscous with buttered spinach on top. On the side is a salmon burger grilled with dill weed on it, topped with feta cheese.
Farewell for the nonce, couscous! We’ll meet again, some day! This, I swear!

August 12, 2015 at 7:49amI love the ease and quickness of making couscous but the flavour is usually lacking. I think I’ll try your recipe with the spice and black beans/cheese on top.

August 12, 2015 at 8:22amYeah, couscous is definitely a base, not a dish, unless you spice it up. Traditionally, it’s served with a spicy stew on top, but my husband can’t tolerate anything very spicy, so I keep things toned down for him. 🙂
