A Tale Of Two Cauliflowers #Vegetarian could be #Vegan

Actually, it was one cauliflower, two meals. See, I cut the core out of a head of cauliflower, put it (the head, not the core) on a microwaveable plate, cover it with a big bowl, and microwave it for 7 minutes. Then I cut it in half and cook one and save the other to cook another night. There’s just the two of us, after all.

Meal One:

Broke the cauliflower into florets, tossed them with olive oil, cumin, and Lawry’s seasoned salt. Roasted ’em at 400 for about 30 minutes(ish). Topped ’em with feta cheese.

Meal Two:

Broke the cauliflower into florets. Tossed them with Alfredo sauce, sliced olives, and shredded mixed Italian cheeses. Topped it with a couple of leftover slices of CoJack cheese and baked it until the cheese melted.

Both. So. Good.

    I like cauliflower, but I don’t like Feta cheese and I don’t like olives, so…boo

      Yeah, that’s a boo from you, all right. Man, if it had only been kale instead of cauliflower, I’d have had a perfect score.

    I thought black olives…but no you used green. I’m thinking that gave the dish a zing. 🙂

    I love cauliflower prepared with potatoes, and caramelized onions with lots of Indian spices. Allo Gobi. My favorite of all favorite cauliflower dishes. Wonder if He-Man wants Indian for lunch? See what you did! 🙂

      Charlie doesn’t like Indian spices. 🙁 I have to bung ’em on at the table just for me, but that isn’t nearly as nice as cooking them into the food.

      Oh, everything has personality with me. I feel sorry for skeeters’ families when I squish one. I tell scraps I put in the compost that they’re going on a wilderness adventure.
