Bumblebee Stew #Vegan #Vegetarian

This is vegetarian, because I topped it with cheese. If I hadn’t, or if I were lucky enough to have Daiya cheese shreds available to me, it would be vegan.

Bumblebee Stew

  • olive oil
  • chili powder
  • cumin
  • onion powder
  • garlic powder
  • salt
  • flour
  • can black beans, undrained
  • can corn, undrained
  • can chopped tomatoes with green chilies, undrained
  • cilantro
  • semi-sweet chocolate

Heat the oil and toast the spices. Stir in the flour, adding more oil, if necessary. Add the vegetables, cilantro, and chocolate and heat until thickened. Serve over rice.

Of course, you can use fresh onions and garlic.

Yum.

I’m posting at Fatal Foodies today about roast squash. Also yum.

What a fun & easy recipe. I like the name of it and have all the ingredients in the pantry. Thanks. I’ll be a busy bee and make it soon. ?

The version I had in a restaurant was a little sweet. They put shredded chicken and honey in it.

I take it no bumblebees were harmed in the production of this stew πŸ™‚

Well that’s just heartburn in a bowl and I want some! Sounds wonderful! My MIL does chocolate chili. It’s best eaten at noon πŸ˜‰

SO GOOD! Maybe honey would un-heartburn it? Some recipes call for honey.
