So, like I said, I got a portable ASmoke portable applewood grill.
And I’ve been grilling and I started:

I scored a chicken at the farmers market, and I smoked that sucker.
I sprayed it inside and out with olive oil and seasoned it inside and out with salt, pepper, and this-and-that. You know how I do. I tucked a li’l baby onion inside. Going forward, I’ll put it in a larger pan and also put it on a wee li’l grate to hold it out of its own juices. Maybe. But definitely a larger pan. I drained off most of the delicious juices (which I used to enrich the broth for the chicken and dumplings I made with the leftovers) before I took this picture.
This grill is so MomGoth-proof … I mean fool-proof, it has a SMOKE setting. I just set it to SMOKE, popped this bird in, closed the lid, and checked on it every so often. There’s a plug-in electronic thermometer, so I could monitor the internal temperature of the bird.
Y’all, even the white meat was juicy. Do you know how rare that is for me, to have thoroughly cooked but juicy white meat? Very, that’s how.
You know to cook turkey low and slow. I’m here to tell you that you might want to consider cooking chicken that way, too, whether on a smoker or in the oven.
