As I recall, Piglet said that in a Winnie the Pooh cartoon. Our kids picked it up, and we’ve used it ever since, snapping it into place in all sorts of situations.
Also, down around these parts, a mess is a big bunch of food.
So I made this mess with fresh produce from the farmers market. (NOTE: I can never decide where to put the possessive apostrophe in farmers, so I leave it out. Call me ignorant. Call me lazy. –Oh, you did? Come over here and say that!)
Where was I?
Oh, yeah. This mess:
I boiled potatoes and kale together and mashed them together (kind of colcannon? kalecannon?). Meanwhile, I microwaved an ear of corn in the husk for three minutes, let it cool, shucked it, cut the kernels off, and added them to the mess.
Y’all — This is my favorite meal. I love it more than I love steak, and I love me some steak.
I suppose you could add some crumbled bacon and/or cheese and/or butter rather than vegan margarine, but I’m all about this right here.
