This isn’t vegan or vegetarian, because I had a bit of chicken left over from a rotisserie bird who called my name in the grocery.

I split the difference by tossing out the flavor packet and using a cube of NotChick’n. There are shiitake mushrooms and corn in there, and some ginger and garlic and pepper, and I thickened it a bit with corn starch.
How you make the eggs like that: Bring a pot of water to boil and THEN put the egg in. Cook it for exactly 6 1/2 minutes and transfer it to a pan of ice water.
