Food: Avocado Toast My Way

I’m told that avocado toast is bougie hipster food, to which I reply, in my usual ladylike manner, bite me.

I had some of this to-die-for olive bread frozen from this past year’s farmers market and had to take it out of the freezer because blah blah blah.

I had half an avocado and a tad bit of tofu. I mished those up with salt, pepper, Italian herb mix, onion powder, sesame seeds, and a little lime juice. I wouldn’t put it past me to have thrown in a little chipotle powder, too.

I packed that onto slices of olive bread, coated the top with bread crumbs, and fried it in vegan “butter”, then topped it with vegan mozzarella.

Now, if that ain’t a good meal, it’ll do until a good meal comes along.

That looks good. If it wasn’t for the olives and the avocado, I might try it. I’m not a fan of either, but it does look good.

What will you use in place of avocado? I’m thinking refried beans might do….

I do like refried beans. I sometimes eat Guacamole but I wouldn’t want to overdo that. I cannot eat olives in any form.
