Food Tuesday: A Burrito Made Of Egg

This breakfast is hearty out of proportion to its size. It looks kinda huge in this picture, but that plate is a breakfast plate, not much bigger than a saucer.

I use an egg substitute called JustEgg to make an omelette filled with vegan cheese and fold-rolled like a burrito, then I put that on top of a hash brown cake (they come in a bag in the frozen potato section). The omelette is always seasoned with salt, pepper, and marjoram because that’s how my late husband liked it.

      I like the texture contrast between the crispy hash brown and the soft egg. 🙂
