Food Tuesday: Birrrrrria

I fell off the turnip wagon again. My local grocery (now part of a national chain) had jars of birria sauce and also had chuck roast on sale, so what could I do? Well, yes, “resist”, but other than that.

ANYWAY, I bought both. So I cut off a bit of the meat and boiled it with onion, salt, and pepper to get some beef broth.

Then I seared the rest of the beef in oil in the Instant Pot, added the broth and the birria sauce, and pressure cooked it for about two and a half hours.

I actually just used a bit of the beef. The rest is in the freezer, awaiting another lapse.

So that was pretty good, but I’m actually aiming for birria tacos.

For birria tacos, you warm up a corn tortilla (or, as I’ve seen it done in restaurants, two baby tortillas), add shredded birria meat, onion (caramelized onion is what I had, so caramelized onion is what I used), and a soft white cheese (mozzarella is what I had, so mozzarella is what I used). Fold it over, dip it in the sauce, and fry it.

I almost forgot to take a picture.

It wasn’t up to the standards of the best restaurant birria I’ve had, but it was a good start.
