First, I caramelized some onions, but you could just do regular onions, very thinly sliced, or you could not use onions. Then, I grated a metric fuckton of cheddar cheese and half a metric fuckton of Parmesan cheese. Then, I sliced some russet potatoes very thinly. Put some of the cheese aside for topping the bake later.
Meanwhile, I put some vegan margarine in my cast-iron skillet and preheated that in the oven to 450F (~232C).
Okay. Take the hot skillet out of the oven and put down a layer of potato slices, then onion (or you could un-vegetarianize it by using ham or cooked bacon), then salt and pepper, then some of the cheese.
Continue layering until all the potatoes are used, cover the skillet, and put it back into the oven and leave it for about 40 minutes. At the end of that time, uncover it, add the rest of the cheese, and bake it uncovered for another 15 minutes, or until the cheese on the top is as melty and/or crispy as you like.
This is what was left at the end of the meal.

October 22, 2024 at 1:33pmI got lost looking at potato casserole vs. potatoes dauphinoise vs au gratin vs scalloped. I’m not entirely sure what this would be called, but it was easy and, if you don’t caramelize your onions, quick to put together.
