Food Tuesday: Leftovers Quesadilla

I ordered a carnitas dinner with extra refried beans and a side of just plain cheese-in-a-container and had it all Dashed to me. Kind of expensive, especially since I usually bump up the suggested tip, but I had it for four meals myself, plus I made this to share three ways (along with a pot of soup).

That’s a flour tortilla topped with a little shredded carnitas, refried beans, cheese, sliced green onion, salt, and cumin powder. I topped it with another tortilla and browned it in a non-stick pan then flipped it and browned it on the other side. It was SO GOOD!
