Food Tuesday: Ribs and Kraut

I told Dan I was going to do this, and JayC had a sale on pork ribs, so I did it.

I cut the rack into little-old-lady-sized portions and froze them. When I took the notion, I took out a frozen portion and put it, along with a cup of water, into my Instant Pot. I sprinkled it with salt, pepper, onion powder, and caraway seeds, put on the lid, and cooked it for 30 minutes. Then I de-pressurized it, put in some cut potatoes, salted and peppered them, put the lid back on, and cooked it for another 20 minutes.

I heated up the kraut in the microwave, and had a feast. The pork was juicy and delicious and fall-off-the-bone tender. Freezer to plate in less than an hour. As my grandpa would have said, “You can’t beat that with a stick.”
