Food Tuesday: This Potato Thing

I made this potato thing for breakfast. I started with heating up frozen Potatoes O’Brien (potatoes, bell peppers, and onions). Then I added salt, pepper, marjoram, vegan egg substitute, and Fuego Colby Jack Cheese.

Cooked it, flipped it, ate it.

Was it good? I’ve had worse.

As #4 Daughter, the amazing Sara Marian, said when somebody asked if it was safe to eat a thing, “Oh, you can eat anything once.”

    I love the name of the dish – “potato thing” because it sums it up so well and because my body does very well with potatoes – I would have probably liked this (more than once) and WITHOUT any flour… it looks so good in your photo

      It did turn out pretty good, all in all. I’m part German and part Irish, so I’m pretty much made of potatoes. The joke in our family is that our idea of a seven-course meal is a six-pack and a potato.

      If I had it to do again, I might add some flour to make it more pancake-y. Or maybe not.
