Food Tuesday: Devil For One

My doctor worried that I was only eating fast food and processed food now that I’m alone. I assured her that I cooked for one before I married and I cooked for two after the kids grew up and left and I cook for one again now.

If it’s something that can’t be reduced to a single serving, I just eat it for multiple meals or give some away or freeze some.

Then there’s deviled eggs. I love deviled eggs, but just one at a time. So….

I generally boil several eggs at once (bring water to a boil, gently lower eggs into it with a slotted spoon, let them boil for seven or seven and a half minutes, take them out and put them in COLD water). Then I’ll peel one, cut it in half, gut it, and mix the yolk with my fixin’s. My fixin’s are vegan mayonnaise, powdered mustard and paprika, and salt and pepper. Some people like Miracle Whip (yuck), some people like sweet relish, (double yuck), different people like different fixin’s. Those five are mine.

Mix that all up and stuff it back into your gutted egg and BOOM!

BOOM!, bitches!

As my grandpa would say, “Messy but nourishin’.”

Again, yes, I use my Christmas plates all year ’round. I live alone, and I does what I pleases.

    I love deviled eggs. I never thought of making just one. Then again, I’ve never eaten just one when staring at a plate of them.

      I don’t like other people’s deviled eggs. Except Teresa Stepro’s. She makes the best! I have her recipe; I’ll have to slap one together for myself, although I bet it won’t be as good as hers.

        Our daughter makes pretty good ones. In 1971, I worked for a catering company. We catered a short trip for the Pirates after they won the World Series. I had to peel, slice and scoop a dozen, dozen hard boiled eggs. The women who coked took all the yolks, boxes of spice and mixed it all up. They stuffed that into a huge pastry bag and filled those eggs faster than I could imagine it being done.

          Using a pastry bag with a flower tip makes a pretty dish. I’ll bet the Pirates gobbled them up!
