Food Tuesday: Eggnog Pancakes

Not gonna lie: Not everybody would like these. I made ’em on a whim, and I wasn’t mad at the result, but you might have been.

I got some dairy free “eggnog” and I had some buckwheat pancake mix, and I slopped ’em together and made pancakes.

The result was crispy on the outside and wet on the inside. Not soft, not pillowy, pretty much wet. I thought the taste was great, and I didn’t mind the weird texture. It was unexpected, but not nasty (to my taste).

I’ll pass, but only because I’m not a fan of eggnog. I know, how can that be, but it’s true. They look good.

  Charlie couldn’t understand how I could love egg nog and sour cream but hate buttermilk, which is kind of like each. But so it is.
