This wasn’t actually vegan or vegetarian, but it totally could have been.
I had a bit of summer sausage, so I diced it and some onion and sliced some mushrooms and cooked those while my orchetti was cooking. Then I added some RAO brand spaghetti sauce and the drained orchetti along with some of the pasta water and some frozen peas and cooked all that down until the peas were done and the sauce was thickened. Some Parmesan cheese on the top and Bob was my uncle.

If I ever write a cookbook, I should probably entitle it Tastes Better Than It Looks.
ANYWAY, you could leave out the meat and cheese or substitute chicken or ham for the summer sausage or whatever. Cooking isn’t recipes, it’s an experience.

August 26, 2025 at 2:07pmThat sounds delicious, Marian. Frozen green peas are one of my go-to items in the freezer pantry. I often add a serving of them to a frozen dinner — easy to cook at the same time.

August 28, 2025 at 8:31amI’m told that “little ears” is what orchetti means in Italian. #4 Daughter is a big fan of frozen peas. I kinda like the canned ones, but I can control the portions of frozen ones. You open a can of peas and you have to deal with a can of peas. My store used to carry half-size cans, but 1) they don’t anymore and 2) more to recycle.
