No-Bake Truffle You Won’t Care Is #Vegan

These are SO GOOD! They’re a variation of Becca’s Chocolate Nutty Truffles from THE TEEN’S VEGETARIAN COOKBOOK. Back before I cooked vegetarian almost all the time, I bought this book for a friend’s teenager, and the recipes looked so good I bought myself a copy.

Charlie was having headaches, and wondered if it was because of the dark chocolate candy we keep in the freezer to nibble on.

So I made these, which don’t have the chocolate chips that are in “Becca”‘s.

Vegan TrufflesNo-Bake, No-Chocolate Truffles

  • 1/4 cup sliced almonds
  • 1/4 cup cashews
  • 1 cup nut butter (I used peanut butter)
  • 4 Tablespoons maple syrup
  • 1/4 cup chopped dates
  • powdered sugar
  1. In a dry skillet, heat almonds and cashews over a low heat, stirring frequently, until they smell toasty and … well … nutty.
  2. In a bowl, mix together nut butter, maple syrup, nuts, and dates. (If you DO use chocolate chips, add them now.)
  3. Make teaspoon-size balls of the mixture and roll in powdered sugar. –Pardon me, I just had an I Love Lucy vision– Roll the balls in powdered sugar. Thank you.

You can use any kind of nuts and any kind of nut butter and any kind of dried fruit and any kind of sweetener you want. I guess you could use broken pretzels. I guess you could use that new coconut macaroon cookie spread instead of nut butter.

It’s all good.

    A lovely and teasing concoction.

    When we first met the awesome and mighty Emir in SCA,it never crossed our minds that he might be a chef. Specifically, whatever it’s called who makes delicious desserts. Then he showed up at a Tournament with large amounts of goodies. That he had made himself. It was his profession. The dark chocolate coated marzipan nuggets were devine! He sold them by the handful, and when I came to buy mine, he gave me one of HIS handsful, and it was a LOT!

      I remember the Emir and his goodies. …Let me rephrase that…. The Emir was a pastry chef, and I remember that marzipan. I didn’t eat any, because it was anise-flavored, and I was a lot more sensitive to anise then than I am now. I remember their beauty, though. I miss the glamor of SCA, but I sure don’t miss the politics. heh

        You sure said a mouthful there!
        I still think my best SCA innovation was proclaiming that our local group would hold elections every 6 months. That way, it was no big deal to suggest a change at the helm. If necessary. Usually, thank Ghu, in our Barony, it was mostly a challenge to find people to take the positions rather than trying to find ways to prise power from the grasping fingers of bullying SCA-perfectionists!
