This is chicken curry, but it doesn’t have to be chicken. It could totally be vegan.
I don’t often make a long and complicated recipe, but Oldest Grandson was coming for dinner and he requested curry, so I made this.
First, I made this Brown Curry Sauce. I make it pretty much the way the recipe goes, except I used fresh tomatoes instead of canned, since I scored a bunch of great veg at the farmers market. I also put some garam masala powder in.
While that was going on, I sautéed some mushrooms, cauliflower, green peppers, tiny skinny green beans, and Amish chicken with vegan margarine (because I like it) and curry powder. I let all this sit in the fridge overnight.
The next day, I put it all together in my Instant Pot and let it simmer down and thicken. It looks like this:
Served it over Jasmine rice. It got high marks from my grandson.

I’ve got an Instant Pot snd some accessories in my shopping cart. I think it’s neat you can brown meat in it and slow cook.

September 12, 2018 at 8:19amOoo, what accessories have you chosen? I only have the rack that comes with it. I already have a metal steamer. And I love that saute function, too. Any device that removes a step where I have to pour a hot thing into another thing is good.

I’ll be scouring recipes from now til then trying to decide what to make. I’d make your curry, but He-Man isn’t a fan of curry sadly. ?
In case you’re wondering why replacement sealing rings? I’ll keep the original one for savory food, and the red replacement ring for sweets so they don’t have a smell or taste from the savory ring. I have heard that happens.

September 13, 2018 at 7:50amYes, I did! I bought some extra seal rings, too, but I’ve never made sweets in the pot, so I don’t know if I need them for that. I just got them in case the original ring ever goes bad.
Charlie won’t eat curry, either. I only made it because Oldest Grandson requested it.
