Gnocchi Casserole, Could be #Vegetarian But Isn’t

It started out vegetarian, but it fell off the turnip wagon along the way. I had these shrimp, see….

The casserole is supposed to go like this:

Cook some gnocchi. Put them in a buttered casserole dish. Make a white sauce. Stir in halved cherry tomatoes and fresh baby spinach. Pour it over the gnocchi. Bake it until it’s bubbly.

Naughty me, I tossed six shrimp (frozen, not live) into the boiling water with the gnocchi, separated them from the strainer, and put them on top of the casserole.

Sprinkled the top with smoked paprika (MMMmmmmm, smoked paprika!).

Ain’t that purty?

It was so good, Charlie even said so!

I’m posting today at Fatal Foodies about rice cakes that turned out, as my grandpa would have said, messy but nourishin’. He would also have said, about the appearance, That don’t hurt the eatin’ of it.

    “Could be #Vegetarian But Isn’t” – Now there’s an enticing title. This looks good. I suspect it would be good without the shrimp.

      I think it would be. But the shrimp were hanging around, taking up space and paying no rent, so ….

    I want to know what storebought gnocchi you chose. I make gnocchi only when I am feeling my most happy Italian as I must have wine and loud classical music with hours to kill on a sunshiney day. Like, it’s on the recipe card in my brain. I have never bought it and need to know if I can fake all that.

      I THINK it was Kroger’s Private Selection, but I’ll check next time I’m in the grocery. 🙂
