We actually put a couple of messes into the compost this week. Y’all know that’s rare for us, but some messes just don’t work out. The older Charlie gets, the less willing he is to eat my mistakes, and I’m okay with that. I never was willing.
The culprits, in these cases, were vegetables that didn’t stand well on their own. Yes, I totally could have salvaged them, but my mind is kind of on other things these days. I feel bad, now, that I tossed them, but I’m not digging them out of the compost. I’m not THAT into raccooking.
ANYWAY, I made black beans and rice, which was, as it always is, satisfying, but it made A LOT, and Charlie got tired of eating it. So I made vegetarian “burgers” out of what was left.
Just stir in an egg, a little flour, salt (if it needs it) and, if you like (I did), a heapin’ helpin’ of chipotle powder. I do love chipotle powder!

June 16, 2020 at 8:27amI made dahl and rice last night so the leftover rice became friend rice tonight. I did add some crispy bits of back though. Was a low meat rather than a no meat meal but the peas, corn and capsicum did most of the heavy lifting. Is that chipotle powder like a chilli powder?
