Corn Thing #food

I don’t have a quesadilla maker, but I have a waffle maker. If you don’t mind squares on your quesadillas, it works just dandy.

So I had corn, refries (which I made), and corn quesadillas, stuffed with spinach, cheese, and some kinda meat. Sometimes I use shrimp, sometimes leftover carnitas, sometimes chicken. Or sometimes I put the refries in there instead of on the side.

I’m not up to daily posts yet, but I miss you guys. Thank you for all the kind words and support. I heart you the mostest!

Oh — How to make refried beans my way: Heat a little oil in a non-stick skillet. If you have an onion, chop it and cook it slowly in the oil until it’s tender. Add cumin to taste. Open a can of pinto beans and put it, undrained, into the pan with the onion. Mash the beans all to hell and back, and cook it, gently, stirring often, until most of the liquid is gone. Salt and pepper to taste. Add cilantro and lime juice if you want to.

I’m no longer posting at Fatal Foodies. The site is folding. It was supposed to be a group blog, but nobody else has time and I now lack the enthusiasm.

    You gave me ideas! I don’t have a waffle iron, either. But I do have one of those “Shell Bakers” (circa 1980s) and thought, “What if I make little quesadillas in THAT, and fill them with pico, sour cream, and jalapenos? I also don’t like corn tortillas at all (well – not unless they’re crunchy and called “chips” and served with really hot salsa). If I try my idea, I’ll be sure to post it and link back to you for giving it to me!

      I prefer flour tortillas, but my ClickCart grocery gatherer couldn’t find the flour ones and substituted corn. Let me know how yours turn out!

    We don’t have a waffle iron or anything, but this looks like the kind of thing the Offspring would love – eats meat but won’t cook with it [raw, icky, no!].

    I’ve been thinking about putting together a digital book of home cooked, /simple/ recipes that even beginners can manage. Maybe once you’re feeling a bit more energetic we could brain storm something?

        Just checked out the Alligator Sandwiches – simply brilliant! These are precisely the non-cheffy type recipes I mean. Btw I do a great cucumber raita-ish thing with cucumber, garlic and yoghurt. Peel cucumber and slice thinly [no need to take out seeds and stuff, just make the slices /thin/]. Add salt. Let stand for about 1/2 an hour. Squeeze out the moistures as much as possible [the cucumber collapses but that’s okay]. Add finely mashed fresh garlic [to taste] and stir in enough plain yoghurt [no sugar!] to make the raita look white-ish with lumps. Serve with anything fatty, e.g. schnitzels. I also serve with Hungarian goulash.
        Now…I wonder if we could put the word out and come up with a /series/ of books with different levels of difficulty? And of course, an appropriate animal for each one. πŸ™‚

    I never thought of using the waffle iron to make quesadillas! I wonder if I kept it or donated it when I was clearing stuff out for my move? I’ll go look! The rare times I make quesadillas I usually just put it in a non stick pan and lightly brown each side until the stuff inside melts and is hot. πŸ˜€

    Your refried beans sound yummy! It’s been ages since I made those myself.

      Slap it in a skillet works, too! I generally fill mine too full (because glutton), which makes them hard to flip. πŸ˜€

    I like your way of making refried beans. We make ones using a similar recipe of sorts. I use our waffle iron to make corn muffins when I’m too lazy to get out the cupcake tins. True confession. Judge me as you will, but they’re tasty.
