Although I’m making a lot of stuff fresh, I haven’t given up raccookin’.
So I had some leftover meat (in this case, it was pork ribs, but it could just as easily have been chicken, but it wasn’t, it was pork ribs), leftover rice, leftover black beans, and a green pepper that was about to go to Jesus. So I threw in some salsa, cumin, and cheese, and baked it.
A whole green pepper will do me for two meals, so I had one half for supper and leftover leftover stuffed green pepper the next day for lunch.
