Leftover Stuffed Green Pepper

Although I’m making a lot of stuff fresh, I haven’t given up raccookin’.

So I had some leftover meat (in this case, it was pork ribs, but it could just as easily have been chicken, but it wasn’t, it was pork ribs), leftover rice, leftover black beans, and a green pepper that was about to go to Jesus. So I threw in some salsa, cumin, and cheese, and baked it.

A whole green pepper will do me for two meals, so I had one half for supper and leftover leftover stuffed green pepper the next day for lunch.

    I’m trying to decide whether vegetable heaven is where vegans go when they die…or the place without vegans where vegetables go when they die. And could there possibly be an afterlife where vegans and vegetables coexist in harmony? So many questions unanswered. I guess I’d better sleep on it. Perhaps an answer will come to me in my dreams.

      Girl…. I’ll have what YOU’RE having. 😀 Did you come up with an answer to these existential questions? You know, The Good Book says, “In heaven, there will be no vegans or eating of vegans.” That’s Moses, Chapter Seven, Verse Twelve. You can look it up.

    My dreams were unclear on the subject. I suspect I will come back in my next life as a rutabaga just to find out. If you are joining me, that would likely make you a squash of some sort. I think you’d make a lovely acorn squash.
