Repeat A Pita #vegan

I scored a box of HUGE shiitake mushrooms at the farmers market, so decided to make a thing.

I melted some vegan margarine in a medium hot pan while I cubed the shiitake caps and cut up a green onion. Then I fried the onion and mushrooms with salt, pepper, and fines herbes (equal amounts of chopped fresh parsley, chives, tarragon, and chervil) until the mushrooms were browned.

Guess what I added next? If you know me, you might have guessed red cooking wine, in which case you would be right. While the wine and margarine were reducing to almost nothing, I cut a pita in half and heated half of it.

And this happened:

Yeah, that’s the last of this year’s sweet corn down there out of focus.

A simple dish, but oh, so good!
