Food: Vegan Sausage Pancake

I got a yearning for pancakes and sausage drenched in maple syrup. What’s a wannabe vegan to do? Well, yes, I could fall off the turnip wagon, as I often do, but I decided to challenge myself. I gathered:

  • MorningStar Farms Original Veggie Sausage Patties, defrosted and torn into pieces
  • Bisquick Heart Smart Pancake & Baking Mix
  • NotMilk milk substitute
  • Just Egg egg substitute
  • Miyoko’ oat butter (has a nice nutty undertone)
  • whole pecans

I mixed everything but the butter together and cooked the batter in the butter.

Yeah, it was a big’un.

It made two breakfasts for me.

Oh, and I topped it with real maple syrup.

    Sausage and maple syrup is one of my favorite flavor combinations.
