Me, I love mushrooms. Y’all know that. I haven’t tried sweet mushrooms, and it’ll be a minute before I ever consider it, but I love mushrooms for just about anything else.
So this was breakfast.
I always cook mushrooms with a little salt in a hot, dry pan, to concentrate their flavor. THEN I push them to one side and add some vegan “butter” and fry an egg over easy with a little salt and pepper. Sometimes I put the mushrooms on the toast first, and sometimes I put the egg on first. Either way, it is MOST satisfying.

February 24, 2024 at 7:41amI love fried mushrooms, too. I love just about any preparation of mushrooms. Morels are my favorite, breaded and fried in vegan butter.
