Food Tuesday: Veggie Bake

This wasn’t actually vegan, since I forgot I had vegan Parmesan and used dairy Parmesan, but it is what it is. My late husband hated that expression, for some reason. I mean, it IS what it IS — change my mind.

ANYWAY, my #1 Daughter went to the store because she could get there and I’m snowed in, and walked me in some veg: small tomatoes, a yellow squash, and a zucchini. I cut the tops off the tomatoes and chopped off chonks of the squashes, sprayed them with olive oil, sprinkled them with salt and pepper, and put them in the air fryer at 400 for about 20 minutes. Then I sprinkled them with Parmesan shreds and put them back in until the cheese melted a little.

So very, very good!

      The squashes were a little underdone and the tomatoes overdone, but I’m not picky. I mean, I AM picky, but I was hongry. lol

      I am staying safe and warm. #2 Daughter, also not snowed in, is bringing me oatmeal and cheese, so I’m fixed until I can get out. Then I’m going to lay in more staples and frozen foods, because February is usually a worse bastard than January around here.
