Food Tuesday: Chicken and Pork Belly Stew

Sorry if you want 1000 words of backstory on this recipe, but that’s not how I roll.

So I fried some mushrooms and onions in a dry pot (my Instant Pot, to be exact) with a little salt, added a fuck ton of celery and some garlic.

Then I took that out and put in some cubed pork belly and cook that a bit to bring out some fat juice. Then I added a cup of water and some chicken bouillon, some cubed cooked chicken breast (but raw would work just as well; I just had some left over), pepper, Penzeys Bavarian Style Seasoning, and some extra ground sage.

I locked the Instant Pot and pressure cooked all that for 50 minutes. Then I depressurized it, stirred in a can of cream of mushroom soup and some frozen corn, tasted it, adjusted seasoning, and let it cook gently until everybody was here and ready to eat.

Was it good? I’ll tell you what.*
